Steps to make Veg Burmese Khao Suey:
- In a mixer jar add green chilli, ginger, jeera, coriander seeds and churn it into fine paste.
- Now add onion and garlic in the same jar and churn into fine paste
- Heat some oil in pan and stir fry all vegetables till it is half done and keep it aside. You can choose your choice of vegetables here.
- Heat the pan, add oil, saute the green chilli paste and onion garlic paste till aromatic.
- Now add turmeric, besan to the paste and cook for sometime till the besan is roasted well on a slow flame.
- Keep the flame slow and slowly add coconut milk in batches to it, stirring till it mix well without any lumps.
- Now add salt and all the stir fried chopped vegetables.
- Cook on slow flame stirring it for 5 to 10 minutes.
- Now final and very important step. Serving of this coconut curry.
- In a deep bowl place boiled noodles in the center, pour the coconut curry from the sides covering the noodles, add little macaroni into it. Sprinkle some roasted peanuts and chillie flakes on top and finally place some coriander leaves.
