- Mash the boiled potatoes.
- In a kadhai, heat oil, add all the veggies one by one and saute for about 5 minutes.
- Once little soft add the spices.
- Mix well. Cook for another 2 minutes on low flame.
- Now add the mashed potatoes. Mix well.
- Dip the papad in normal water.
- Make a roll from potato mixture and keep it on the wet papad. Roll the papad from all the sides. For more crispness add two papads.
- Make all the rolls. Meanwhile heat oil for deep frying.
- Deep fry on medium flame till crispy.
- Fry all the rolls and place them on tissue paper to get rid of excess oil.
- Papad rolls are ready.
