- Grease bottom only of 9" round pan or spray muffin tin with pan spray
- In large bowl combine flour, brown sugar, baking powder, baking soda, salt, cinnamon, and ginger; mix well.
- Add remaining ingredients; blend well. Pour into greased pan, or fill muffin tins 2/3 full.
- Bake at 350°F for 25-35 minutes or until toothpick inserted in center comes out clean.
