Instructions to make Vegetable Pulav:
- Wash and soak rice for 20 minutes. Meanwhile add ghee and oil in a pressure cooker and add bay leaf followed by whole spices and cashews. Fry till golden brown.
- Next add green chillies and onions saute till translucent and add ginger garlic paste. Fry till raw smell disappears.
- Add the vegetables and mix for few minutes. Then add the rice, mint leaves.
- Add water and salt. Pressure cook on medium flame for 2 whistles. Allow steam to escape and serve hot.
- Note: You can also add 1 cup coconut milk and 3 cups water. Makes it more rich but I prefer to keep it simple.
