- Prepare 1 tsp rice
- Take 1/2 tsp Chili Gigger paste

- Prepare 1/2 tsp Eno (one pouch)

Steps to make Vatidal na khaman:
- Soak chanadal and rice together for at least 5 hrs
- Grind it in mixture grinder with 1tsp curd to make a smooth paste
- Transfer the mixture in a bowl add 1tsp curd ; salt; sugar, haldi and ginger chilli paste
- Take a deep kadai pour some water in it place a stand in it and on the stand place s steel plate greased with little oil
- Add eno to the mixture mix it thoroughly and pour the mixture in the hot plate cover it and let it cook10 mins on high flame
- Yr khaman is ready
- For seasoning heat oil in a small pan add rai jeera sesame seeds curry leaves green chillies and spread it on the khaman cut it in small cubes and serve hot with green chutney
The secret of making them soft and fluffy lies in preparing perfect batter and using right amount of soda bicarbonate. With this recipe you can very easily make fluffy and mouth. From the same batter as Vati Daal na Khaman, I also make Locho. Surti Locho is a breakfast/snack from Surat, Gujarat made from a ground and fermented batter of Chana Daal. It probably was introduced as a case of Khaman Batter accidentally diluted too.
