  1. To make hung curd, take a deep bowl. Put one big sized strainer on it. Spread thin line cloth in the strainer. Then pour the curd in the cloth. Cover the curd with cloth and keep the full preparation with bowl and strainer in fridge for 3-4 hours. So that water portion of curd will drained out in bowl. And we will get hung curd.
  2. In a small bowl take a warm milk and add saffron to it.Now in another bowl take hung curd. Add condensed milk in it. And mix it well with hand whisker. Then add saffron milk into it and mix all together.
  3. Now grease the moulds with ghee. Put some strands of saffron and chopped dry fruits in the moulds. Then pour the curd mixture in all moulds. Cover the moulds with aluminium foil. And arrange them in steamer. Cover the steamer and steam for 20 minutes on high flame.
  4. After coming to room temperature open the foil and set it in fridge for 1-2 hours. Then unmould the yoghurt pudding and serve chilled.

Bhapa Doi or steamed Yogurt is a famous Bengali dessert where thick curd/ yogurt is steamed with a few more ingredients to the level of perfection.
