The ingredients needed to make Rice kheer:
  1. Get 1 1/2 litres full cream milk
  2. Take 1/2 cup rice
  3. Get 1/2 cup condensed milk
  4. Prepare 7-8 saffron strands
  5. Get 1/2 tsp cardamom powder
  6. Take 2 tbsp chopped nuts(almonds, cashews, pistachios)

This kheer recipe is very easy to make and required very few ingredients. All of the ingredients will be available in your pantry. Kheer is not as thick as a Western-style rice pudding, and should be still be a bit fluid when cool. Often I have used substitutions in this recipe, depending on what I had on hand.

Steps to make Rice kheer:
  1. Heat milk in a thick bottom wok.
  2. Soak the rice for at least half hour and then grind it in a blender to smaller particles with little water or milk.
  3. Let the milk boil and then simmer for sometime. Take 2 tbsp hot milk and disk saffron strands in it.
  4. Add the grinder rice to the milk and let it simmer on low flame.
  5. Add cardamom powder and saffron milk and mix well.
  6. When the rice is soft and cooked and the kheer is thick also, add condensed milk to the kheer and mix well.
  7. Let it simmer for couple minutes and then switch off the gas. Serve hot or cold with some chopped nuts.
